Cheesy Lasagna

Ingredients (use vegan versions):
  • 2-3 jars of favorite spaghetti sauce
  • 1-16 oz bag of spinach leaves
  • 2-3 jars of tomato sauce
  • 1/2 lb. carrots
  • 1/4 cup chopped fresh parsley
  • 2 cloves minced garlic
  • 1/4 cup canned low-sodium veggie broth
  • 1 lb. herbed tofu
  • 8 oz. vegan cream cheese
  • 2 Tblspns. lemon juice
  • 1/8 teaspoon nutmeg
  • 12 lasagna noodles, cooked
  • 1/4 cup nutritional yeast, optional
Directions:
Slice carrots and steam, set aside. Add olive oil to a large skillet, place over medium-high heat until hot. Add parsley and garlic, saute for 1 minute.. Add carrots and veggie broth; simmer uncovered for 5 min. Add herbed tofu, vegan cream cheese, and lemon juice; stir well. Cook over medium heat stirring constantly until fake cheesy stuff starts to melt.Stir in nutmeg (possibly you could add some about 1/4 C. nutritional yeast at this step, just to make it a little bit more cheesy!). Remove from heat; keep warm.

Place 3 lasagna noodles in bottom of 11x7 baking dish. spread carrot mixture over top, place 3 noodles on top of that and spread tomato sauce and spinach on top of those, repeat process until all noodles are used up... top with spaghetti sauce. Cover and bake 15 min. at 375 degrees. Uncover and bake an additional 20-30 min. until it is thoroughly heated... use your own judgment. Usually a lasagna takes about 45 minutes to cook thoroughly. this is the best lasagna i have ever made or had, or non-vegan... it is superb... your non-vegan friends will be wowed!!!!!!!

Serves a lot.

Vegan Chana Masala

I don’t know how authentic this is, but I whipped it up last night. It tasted great to me. Heat oil on medium high heat. Fry onions until slightly browned. Reduce heat to medium. Add garlic, curry, and paste. Stir and simmer about 2 minutes. Add chick peas, liquid, lemon juice, salt, and black pepper. Simmer 5-6 minutes, stirring occasionally. Add red pepper to taste. Add margarine, stirring through to melt it. Stir and simmer for 5 minutes more or until peas are softened and dish is hot. Serve over rice.

  • 1 tablespoon tomato paste (I used ketchup, how embarassing)
  • 15 oz can of chick peas drained, reserving 3 tablespoon liquid
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon salt
  • fresh black pepper
  • crushed red pepper, optional to taste
  • 1 tablespoon margarine

Carrot Recipe: Healthy Carrot Casserole

2½ cups carrots, sliced
1 small onion, finely chopped
½ cup water
1 tablespoon honey
¼ cup sunflower seeds
60g almonds, chopped

Add your choice of additional herbs & spices.

Preheat moderate oven. Place carrots, onion, water and seasoning into a saucepan. Bring to the boil, cover and simmer until carrots are just tender. Stir in all remaining ingredients except almonds. Pour into a shallow baking dish, sprinkle with almonds and bake for 15 minutes.

Serves 4 as a side dish.

Here's a Complete List Of the Super Foods, as put together by people like Oprah's doctor, Dr. Weil, WebMD and a host of other nutritionists.

Super Foods, also known as anti aging foods, are foods high in antioxidants as well as high concentrations of crucial nutrients that have been proven to help prevent and in some cases, reverse the effects of aging.

The Super Foods are listed here:

  • red wine, water, and green tea
  • avocado, broccoli, onions, peppers, soy, spinach, and sprouts, hot peppers, leeks, daikon radishes
  • açai berry, apples, blueberries, pomegranates, pumpkin, kiwi, oranges,and tomatoes
  • beans, barley, seeds, nuts, lentils, oats, walnuts and buckwheat
  • cinnamon, dark chocolates, garlic, honey, extra virgin olive oil ("cold pressed"), sea salt, yogurt & kefir
  • sea vegetables, irish moss, umeboshi plums, wheat grass, miso

The problem with this complete list of Super Foods is that they are almost entirely recognizable. Perhaps daikon radish, kefir and umeboshi plums are new to you but the rest are likely to be common foods.

Is it possible that the world's superfoods happen to be the ones we regularly eat OR could it be that the people who collectively compiled this list over time only took the time to explore within their comfort zone.

It's nice to see exotic fruits like the açai berry , foreign fermented foods like miso and crazy vegetables like daikon radish are finally making it to the forefront. The world is a big place for all the superfoods to be concentrated here. Hopefully one day the foods we most commonly recognize will be just a small percentage of the list OR we expand our palette so they're all common place.
